The renaissance was, in many ways, more advanced than Greece and Rome because the Renaissance was more of a continuation of the discoveries and ways of life that had existed during the Greek and Roman times.  As such, it would make sense that the Renaissance had more complex theatre props.  Also theatre was flourishing during the Renaissance so better props would have been made.
