they attempt to explain the behaviors of others by either assuming what is going on or they have had watched them for a while to see a pattern to develop..

They look at there facial features,  and how they act.

there are men and women, some choose to be both or change their gender. often times those people go by "other". those who change their gender are known as "transgender"
