How does one go about defining good and evil?​

There is no good nor evil. Say you are on the "evil side", you obviously think you're fighting for a rightful cause, something that benefits you. Same thing for the good side. Its all about ones intent on their actions. For example, you wouldn't steal a $50 dollar bill if you saw someone just drop it (at least I hope you wouldn't).
