Cinnamon plants, which may be grown on plantations under semi-wild conditions, are cut back to the roots. The new shoots, which develop as long, straight branches, are allowed to grow for two years. Then the shrub is again cut back to the roots. Two longitudinal slits are made in the
long shoots that have been severed, and the bark is peeled off in three-foot lengths, each equivalent to half the bark of the branch. These lengths of
bark are allowed to lie for a day and partly ferment. Then the outer cork is scraped off, and the remainder of the bark is dried. It is then broken into
more convenient lengths to produce the so-called cinnamon "quills." These quills may be pulverized later to produce ground cinnamon spice.
