The Great Indian Spice Brings Traditional Indian Cooking to Boston

Indian food is known for its huge variety of flavors, textures, and cooking techniques. Indian dishes such as butter chicken and dal makhani are popular all over the world.
An Indian restaurant chain called Swaagat Foods recently opened an outlet in Boston. It is called The Great Indian Spice and serves an array of mouth-watering Indian delicacies. "We hope food lovers here will take to our food," says Rajesh Chopra, manager at The Great Indian Spice.
Now, Chopra says he wants to bring traditional Indian cooking methods to a wider public. Therefore, some of the meat dishes at The Great Indian Spice will be prepared using an old Indian technique called dum pukht. Dum pukht is a way of cooking on a low flame, making use of the steam trapped inside sealed containers. Rajesh says that dum pukht cooking was the preferred choice of Indian kings! He is confident that the idea would whet any gourmet's appetite. "Dum pukht helps to retain flavor and moisture. This unique technique is sure to help us attract more patrons too," he says.
Dum pukht was previously made popular in the United States by renowned Indian and American chefs such as Santosh Singh of San Francisco's Namaste restaurant and Brian Hanson of the Golden Goose in Denver. Singh's apprentice, Vivek Chauhan, is The Great Indian Spice's technical consultant.
As expected, the restaurant's ambience has an Indian touch as well. The interiors are vibrant and colorful with raw silk curtains and hand-painted tiles. The restaurant also has a delicatessen that serves a fusion of Indian and global dishes.
