In those days the Church was not merely a thermometer (strictly tells the temperature) that recorded the ideas and principles of popular opinion; it was a thermostat (changes the temperature) that transformed the mores of society.

Using the figurative language shows how they feel and makes their feeling more vibrant and visible through words and imagery. Martin Luther King Jr used figurative language because it is much more convincing. Rather than simply convincing them he put what he felt into words.
