Most of your cooking equipment is copper and your utensils are silver, so which sanitizer would you not want to use

If most of my cooking equipment is copper and my utensils are silver, I will not want to use a sanitizer that contain CHLORINE. This is because, chlorine in the sanitizer will react with the silver of the utensils to form a black layer of silver chloride on the utensils. Also, chlorine will react with the copper of the cooking equipment to form a cloud of  copper ll chloride which will dissolve when it comes in contact with water forming a blue green solution.
