The reason for calculating the percentage change in mass of the onions is to know if an increase in concentration of sodium chloride leads to an increase or decrease in size of onions. And from the result, the increase in concentration of the sodium chloride solution led a decrease in size of the onion (thus the reason for the negative sign of the percentage as the concentration increases).
