Enzymes are sensitive to pH and temperature. If an enzyme’s environment is too hot, the enzyme cannot work properly due to denature of enzyme. Denature means change in shape and structure. Enzyme function is to speed up the chemical reaction. When the shape of enzyme changes, it does not attached to the substrate and doesn't work properly. So optimum temperature is very necessary for enzyme functioning.
